Venison Sausage Pasta

This quick pasta is always a winner. The sausages make delicious little meatballs and pack so much flavour you don't have to worry about adding much more via the sauce. A big platter of this pasta, a green salad and bottle of red wine and you have yourself the perfect winter supper.

1 onion chopped finely
1 packet venison sausages, sliced into 3cm lengths (fennel is our favourite for this recipe)
1 400g tin of chopped tomatoes
500g penne or spiral pasta

Sauté onion in olive oil until softened. Add venison sausages and brown well. Pour in the tomatoes, reduce heat and simmer for 20 minutes. Meanwhile cook pasta according to packet instructions. Toss sauce through the pasta, top with freshly grated parmesan cheese and some chopped parsley.
